Be Human Riesling is an elegant example of Washington’s leaner, drier wines of this varietal. Floral aromas and a bit of minerality, reflecting the renowned Colombia Valley where it is grown, pair beautifully with a saucy shrimp jambalaya or even spicier dishes from Asia and India. On the lighter side, hints of peach and green apple will compliment a cheese board of soft cow’s milk cheese and dried fruit or a plate of fresh roasted veggies.
